A potato is only as good as it’s toppings…and these are stellar.
1. Poke potatoes with fork, then place in a large saucepan, covering them completely with water. Boil until tender, about 20 minutes.
2. Arrange potatoes on a cast-iron skillet or baking sheet and use a potato masher to smash each one. Top with cheddar, bacon, and scallions. Broil in the oven until cheese is melty.
1 bag baby Yukon or red potatoes (3 lbs)
1/2 c. shredded sharp Cheddar
